Healthy Summer Recipes

It’s officially summer! Here in Texas, it’s been feeling like summer since April, but all the more reason for these fun and refreshing summer recipes!
Whether you’re headed across the state for the ultimate road trip or just headed to the park, make sure you pack a snack kit that has plenty of colorful options! Grab a neato-mosquito kit with various size compartments (find at any craft store!) and then load them up with a combo of fruits, veggies and other kid-friendly favorites like pretzels and popcorn. Aim for AT LEAST 3 different colors in the snack kit.

Yogurt buttons are another super fun (and healthy!) snack your kids will enjoy making and eating! Simply put your kiddo’s favorite yogurt (Greek yogurt, if possible, for extra protein!) in a sandwich size ziploc bag, seal it up, cut a hole on the tip and make “buttons” or other fun shapes on parchment paper. Freeze for at least 30 minutes and enjoy!

Mocktail anyone? How about a mocktail that’s packed with flavor but light on calories? Simply mix one part 100% pomegranate juice with one part sparkling water for a simple mocktail that’s a great source of hydration and is really pretty :). Pour the mixture into popsicle molds for a yummy summer treat that’s sweet without any added sugar, flavors, colors or preservatives!

Tired of ants on a log? Then how about trying fish up a river! Simply smear hummus on celery and place whole grain goldfish on top. Serve these with or without ants on a log 🙂
