HAPPY National Peach Cobbler Day! As a dietitian and foodie, I pretty much get excited about every food holiday, but some are more special than others. Peach Cobbler was my dad’s absolute favorite dessert. Countless times I remember mom making it for him, and this particular recipe is fragrant from the start because the first step is melting butter. #butterforthewin
Now, as a dietitian I’m inclined to “revamp” “healthify” “lighten” or “tweak” most indulgent recipes, but not this one. Butter, peaches in heavy syrup.. that’s right, heavy syrup, and you know this is gonna be a la mode before it’s all said and done. If I’ve disappointed you by my lack of creating a “healthy” peach cobbler, I’m not sorry. We can all indulge from time to time :).
This is a family recipe, and I love seeing my greatgrandmother’s handwriting on the paper below. And the food stains totally ad to the authenticity. Note- I do deviate from the recipe slightly as there will be no usage of “oleo”– hah, this recipes screams circa 1970s or 80s. Again, #butterforthewin
My favorite part of this ridiculously easy and delicious cobbler are the edges- they get hard, but the middle part still has a doughiness to it.. so it’s this slightly crunchy, slightly chewy amazingness. Add some ice cream and I think that’s close to Heaven on Earth.
KISS Tip: Don’t stir the ingredients! Let the layers do the work.
KISS Peach Cobbler
Ingredients
- 1 stick butter
- 1 cup all-purpose flour
- 1 cup sugar
- 1 cup milk
- 1 heaping tsp baking powder
- 1 pinch salt
- 1 29 oz can peaches in heavy syrup
Instructions
- Preheat oven to 350 degrees. Place 1 stick of butter in 9X13 baking pan or glass dish and heat in oven for about 5 minutes or until completely melted.
- Mix flour, sugar, baking powder and salt in medium bowl.
- Add 1 cup milk to dry ingredients and mix well.
- Pour batter on melted butter, do not stir.
- Spoon peaches on batter layer and drizzle with any leftover syrup. Again, do not stir.
- Bake for 45 minutes, remove and let cool 15-20 minutes (if you can wait that long). Add a scoop of vanilla ice cream for the full experience my dad always enjoyed :).

Great indulgence! I have made this several times in the last 4 years. It is wonderful as is. The only “tweak” I have ever made was to add cinnamon and/or ground ginger because why not?😀
