Easy Cobb Salad

Servings: 2 salads


  • 4 cups butter lettuce, shredded
  • 2 hard-boiled eggs
  • 2/3 cup cherry tomatoes, halved
  • 12 chicken nuggets, chopped
  • 2 mini cucumbers, diced
  • 1/2 cup shredded cheese of choice (optional)
  • 4 Tbsp ranch dressing, or to taste (dairy-free if desired)


  • Cook the chicken nuggets according to package instructions.*
  • If you don't have hard-boiled eggs on hand, cook them using your method of choice.**
  • While the oven preheats, shred the butter lettuce, halve the cherry tomatoes, and dice the cucumbers.
  • Place the shredded lettuce inside each salad bowl and then top with the chopped veggies and shredded cheese.
  • One the chicken nuggets are done, chop them into bite-sized pieces and add to the salads.
  • Drizzle your favorite ranch dressing overtop and enjoy!


*Average cook time for most chicken nuggets is around 20 minutes. This should give you more than enough time to chop your veggies and hard boil your eggs if you don't already have them on hand.
**I normally use a Cuisinart Egg Cooker, but this guide from The Kitchn is a great resource if you don't have a favorite method.
