Dice potato, deli meat and tomatoes.
Heat oil over medium heat and add potatoes. Cook until almost brown (about 5-7 minutes).
Add deli meat and cook additional 2-3 minutes.
Push deli meat and potatoes to side of skillet and pour in beaten eggs.
Scramble eggs as usual, slowly incorporating potatoes and deli meat.
Once eggs are still a little runny, add tomatoes and cook for 1-2 more minutes. Remove from heat.
Sprinkle cheese on top (mix in if you like) and enjoy!
