I know *some* parts of the country are cooling off a smidge, but here in Texas we’re still staring 100+ degree temps in the face. It’s rough, y’all. The three things that have been bringing us relief- popsicles, our pool and the occasional splashpad.

The inspiration for this recipe actually came from a mocktail. I threw a Beauty for the Inside and Out event at my house earlier in the summer and this mixture was made at a much higher volume as our signature mocktail! It was quite a hit and with a little leftover, it became clear it was also the perfect mix for a refreshing popsicle.

KISS Tip #1: Ditch the popsicle mold and follow the recipe (increase all the ingredients X however many guests you’re serving) for an incredible mocktail.

These are delicious with or without the additional beauty collagen. If you don’t have it, you can make them without and the strawberry lemon flavor will just be a little less bold. KISS Strawberry Lemon Popsicles
Equipment
- Popsicle mold
- Vitamix or high-speed blender
Ingredients
- 4 strawberries
- 1/4 cup lemon juice
- 1 1/4 cup water
- 1 scoop Vital Proteins Strawberry Lemon Beauty Collagen
- 1 Tbsp sugar, if desired
Instructions
- Place all ingredients in the bottom of a Vitamix or high-speed blender and blend until smooth.
- Pour mixture into popsicle molds and freeze.
- Enjoy!
