“Beet” the Summer Heat Smoothie

Is anyone else dying with all this heat? Here in Texas, it’s a daily thing to see 105 degrees on the car dashboard… for reals. So needless to say, I’m upping my hydration and encouraging all my clients to do the same! But I know it’s not always that simple. There’s many of us that just don’t like to drink extra fluids and when I’ve found myself feeling that way, I’m quick to make my breakfast or snack a liquid one.
I also find that the creamier smoothies don’t seem to be as appealing. And I love creamy smoothies- you’ve seen many of them here on the KISS blog. From Banana Split smoothies, to Golden Mango to Wild Blueberry Spiced Chai, I’m a little smoothie obsessed. But this one hundred and ninety thousand degree weather has me needing something light and citrusy in my life. Insert this Cherry Beet Lemon Amazingness for the win.

I’m a huge fan of adding lemon into smoothies. I even elevated a pretty basic strawberry banana smoothie with lemon last year and it’s been one of the most searched recipes on the blog! This time, I really amped up the fun ingredient factor by adding lemon, turmeric, ginger and a Medjool date to a pretty fantastic base of cherries and beets. Trust me, if you make this smoothie once, you’ll definitely make it twice.

The combination of turmeric and ginger give this smoothie a unique spice, but I think you’ll find it’s just the right amount to provide some fun flavor without going overboard.

KISS Cherry Beet Lemon Smoothie

Total Time2 minutes
Servings: 2

Equipment

  • Vitamix or high-speed blender

Ingredients

  • 1 cup frozen cherries
  • 3/4 cup about 2 cooked beets (I use Love Beets Organic Cooked beets)
  • 1 cup unsweetened Ripple milk (my favorite!) or other milk of choice
  • 1 Medjool date, pitted
  • 1/2 tsp fresh ground ginger
  • 1 Tbsp fresh lemon juice
  • 1/4 tsp turmeric powder plus more for sprinkling on top, if desired

Instructions

  • Place all ingredients in high-speed blender or Vitamix and blend until smooth.
  • Garnish with additional turmeric, if desired. Enjoy!

  1. I love that this smoothie isn’t creamy. There’s just something about a creamy smoothie when it’s scorching out that just doesn’t sound right. I don’t eat/drink a lot of beets so I always willing to try new recipes to find ways I like to add them into our meals. Great sounding recipe!

    1. Thank you, Brynn! Glad to know I’m not alone with the way I was thinking. I LOVE all smoothies, but creamy + blazing heat just isn’t a good fit! Hope this recipe ends up being a good way for you to enjoy beers! Perhaps an extra Medjool date may good the first time around to tone down the natural earthiness of the beets :).
