Lemons: Nutrition and Cooking Basics

What are the health benefits of lemons?

Lemons are a good source of Vitamin C. In fact, 1 lemon provides a little more than half of the RDI for Vitamin C. They are also a good source of soluble fiber, although most of us are probably not eating a lot of lemon flesh- just the juice. It’s no surprise that lemons are acidic, but what you maybe didn’t know is that acidic foods can help your body better absorb iron! So next time you’re whipping up one of your favorite lemon recipes (see below!), you can feel good knowing that you’ll get a boost in iron absorption in addition to a delicious meal (assuming there is iron in the meal ;)).

What are lemons good for?

Perhaps the question should be, what are lemons not good for? Lemons can be the star of both sweet and savory lemon recipes (see 10 of my favorites below!) but their uses are endless. Adding lemon to water, to cocktails, to household cleaners and more- lemons are a household and kitchen essential.

Can you eat lemon zest?

Lemon zest is a delicious addition to recipes, especially baked goods! Just make sure to wash and dry your lemons before using, and ideally choose organic lemons, if possible.

KISS Tip- if using the juice and/or the peel, zest the lemon before juicing! citrus zesterI like this inexpensive !
